Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup breadcrumbs (preferably panko)
  • 1 cup grated Parmesan cheese
  • 2 eggs
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 cup unsalted butter
  • 46 cloves of garlic, minced
  • 1 tablespoon fresh parsley, chopped (optional)
  • Salt to taste

Instructions

  1. Pound chicken breasts to about 1 inch thick for even cooking.
  2. Beat the eggs in one bowl; mix breadcrumbs, Parmesan, garlic powder, and Italian seasoning in another.
  3. Coat each chicken breast first in the egg wash, then in the breadcrumb mixture.
  4. In a skillet, melt butter and add olive oil. Fry chicken breasts for about 6-7 minutes per side until golden brown.
  5. In a saucepan, melt remaining butter, add minced garlic, and sauté for 1-2 minutes. Stir in parsley and salt.
  6. Arrange chicken on a plate, drizzle with garlic sauce, and add extra Parmesan.

Notes

For added flavor, let the chicken rest after frying before serving. Serve with sides like garlic mashed potatoes or a Caesar salad.
