- 4 boneless, skinless chicken breasts
- 1 cup breadcrumbs (preferably panko)
- 1 cup grated Parmesan cheese
- 2 eggs
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1/2 cup unsalted butter
- 4–6 cloves of garlic, minced
- 1 tablespoon fresh parsley, chopped (optional)
- Salt to taste
Instructions
- Pound chicken breasts to about 1 inch thick for even cooking.
- Beat the eggs in one bowl; mix breadcrumbs, Parmesan, garlic powder, and Italian seasoning in another.
- Coat each chicken breast first in the egg wash, then in the breadcrumb mixture.
- In a skillet, melt butter and add olive oil. Fry chicken breasts for about 6-7 minutes per side until golden brown.
- In a saucepan, melt remaining butter, add minced garlic, and sauté for 1-2 minutes. Stir in parsley and salt.
- Arrange chicken on a plate, drizzle with garlic sauce, and add extra Parmesan.
Notes
For added flavor, let the chicken rest after frying before serving. Serve with sides like garlic mashed potatoes or a Caesar salad.
