- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tablespoon vanilla extract
- 2 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup granulated sugar (for the topping)
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Mix together the butter, brown sugar, and granulated sugar until smooth and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla.
- Whisk together the flour, baking soda, and salt in another bowl. Slowly add this mix to the wet ingredients, mixing until just combined.
- Scoop rounded tablespoons of dough onto the prepared baking sheets, giving them space to spread.
- Bake for about 10–12 minutes, or until the edges are golden but the centers are still soft.
- Sprinkle a pinch of granulated sugar on top of each cookie and caramelize it using a kitchen torch or broiler.
Notes
Don’t overbake the cookies; let them cool before sealing up in an airtight container.
