- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 cup sun-dried tomatoes, drained and chopped
- 2 cups fresh spinach
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
Instructions
- Pat chicken breasts dry and season both sides with salt and pepper.
- Heat olive oil in a skillet over medium-high heat and sear chicken for 2-3 minutes per side until golden-brown.
- Transfer the seared chicken to the slow cooker, arranging them in a single layer.
- In a bowl, whisk together minced garlic, heavy cream, chicken broth, and Italian seasoning.
- Pour the creamy sauce mixture over the chicken in the slow cooker and scatter the sun-dried tomatoes on top.
- Cover and cook on LOW for 6 hours or HIGH for 3 hours until chicken is tender.
- Stir in fresh spinach and grated Parmesan cheese just before serving.
Notes
For a lighter version, swap heavy cream for half-and-half or coconut milk. Serve over zucchini noodles for a lower-carb option.
