Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup sun-dried tomatoes, drained and chopped
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning

Instructions

  1. Pat chicken breasts dry and season both sides with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat and sear chicken for 2-3 minutes per side until golden-brown.
  3. Transfer the seared chicken to the slow cooker, arranging them in a single layer.
  4. In a bowl, whisk together minced garlic, heavy cream, chicken broth, and Italian seasoning.
  5. Pour the creamy sauce mixture over the chicken in the slow cooker and scatter the sun-dried tomatoes on top.
  6. Cover and cook on LOW for 6 hours or HIGH for 3 hours until chicken is tender.
  7. Stir in fresh spinach and grated Parmesan cheese just before serving.

Notes

For a lighter version, swap heavy cream for half-and-half or coconut milk. Serve over zucchini noodles for a lower-carb option.
