A cozy and delicious creamy tomato tortellini soup, perfect for quick weeknight dinners.
Ingredients
- Tortellini: 1 package (about 9 ounces)
- Tomato Sauce: 1 can (15 ounces)
- Diced Tomatoes: 1 can (15 ounces)
- Vegetable or Chicken Broth: 4 cups
- Cream: 1 cup
- Spinach: About 2 cups
- Garlic: 3 cloves, minced
- Onion: 1 medium, diced
- Oregano: 1 teaspoon
- Basil: 1 teaspoon
- Salt and Pepper: For seasoning
Instructions
- Sauté the Aromatics: In a large pot, melt some butter or heat olive oil, add onion and garlic, and sauté until the onion is translucent.
- Add the Tomatoes: Pour in tomato sauce and diced tomatoes, stir and bring to a simmer. Add oregano and basil.
- Pour in the Broth: Add the broth and let it bubble for 5-10 minutes.
- Toss in the Tortellini: Add tortellini and cook for 3-5 minutes, until tender.
- Add Cream and Spinach: Stir in cream and spinach, let cook until the spinach wilts. Season with salt and pepper.
