Description

A cozy and delicious creamy tomato tortellini soup, perfect for quick weeknight dinners.


Ingredients

  • Tortellini: 1 package (about 9 ounces)
  • Tomato Sauce: 1 can (15 ounces)
  • Diced Tomatoes: 1 can (15 ounces)
  • Vegetable or Chicken Broth: 4 cups
  • Cream: 1 cup
  • Spinach: About 2 cups
  • Garlic: 3 cloves, minced
  • Onion: 1 medium, diced
  • Oregano: 1 teaspoon
  • Basil: 1 teaspoon
  • Salt and Pepper: For seasoning

Instructions

  1. Sauté the Aromatics: In a large pot, melt some butter or heat olive oil, add onion and garlic, and sauté until the onion is translucent.
  2. Add the Tomatoes: Pour in tomato sauce and diced tomatoes, stir and bring to a simmer. Add oregano and basil.
  3. Pour in the Broth: Add the broth and let it bubble for 5-10 minutes.
  4. Toss in the Tortellini: Add tortellini and cook for 3-5 minutes, until tender.
  5. Add Cream and Spinach: Stir in cream and spinach, let cook until the spinach wilts. Season with salt and pepper.
