Description

Ingredients

  • 1 lb ground beef or turkey (or 1 can black beans for vegetarian option)
  • 1 packet taco seasoning
  • 1 can cream of chicken soup
  • 1 can diced tomatoes (with or without green chiles)
  • 2 cups chicken broth (or vegetable broth)
  • 8 oz cream cheese
  • 1 can corn
  • Shredded cheese (for topping)
  • Sour cream (for topping)
  • Diced avocado (for topping)

Instructions

  1. Brown your ground beef or turkey in a large pot over medium heat. Drain the fat.
  2. Stir in your taco seasoning, cream of chicken soup, diced tomatoes, and broth until combined.
  3. Add cream cheese in chunks and stir until melted and well blended.
  4. Toss in the corn and mix well.
  5. Bring to a gentle simmer over medium heat for about 10 minutes, stirring occasionally.
  6. Serve hot with shredded cheese, sour cream, and avocado on top.

Notes

For extra kick, add diced jalapeños or fresh cilantro. Can be refrigerated for 3-4 days.
