- 1 lb ground beef or turkey (or 1 can black beans for vegetarian option)
- 1 packet taco seasoning
- 1 can cream of chicken soup
- 1 can diced tomatoes (with or without green chiles)
- 2 cups chicken broth (or vegetable broth)
- 8 oz cream cheese
- 1 can corn
- Shredded cheese (for topping)
- Sour cream (for topping)
- Diced avocado (for topping)
Instructions
- Brown your ground beef or turkey in a large pot over medium heat. Drain the fat.
- Stir in your taco seasoning, cream of chicken soup, diced tomatoes, and broth until combined.
- Add cream cheese in chunks and stir until melted and well blended.
- Toss in the corn and mix well.
- Bring to a gentle simmer over medium heat for about 10 minutes, stirring occasionally.
- Serve hot with shredded cheese, sour cream, and avocado on top.
Notes
For extra kick, add diced jalapeños or fresh cilantro. Can be refrigerated for 3-4 days.
