Description

A creamy and delicious taco soup that combines the flavors of tacos with the comfort of soup, perfect for a quick weeknight dinner.


Ingredients

  • 1 pound ground beef or turkey
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 4 cups chicken broth
  • 1 cup cream cheese
  • 1 cup shredded cheese (cheddar or Mexican blend)

Instructions

  1. In a large pot over medium heat, add ground beef or turkey. Cook until browned, breaking apart as it cooks.
  2. Add chopped onion and garlic, and cook for a few more minutes until fragrant.
  3. Stir in black beans, corn, diced tomatoes, taco seasoning, and chicken broth. Bring to a simmer and cook for about 20 minutes.
  4. Add cream cheese and stir until melted and creamy.
  5. Stir in shredded cheese until melted.
  6. Ladle into bowls and top with your favorite toppings such as diced avocados, sour cream, cilantro, tortilla chips, and lime wedges.

Notes

For a vegetarian option, swap the meat for extra beans or lentils. The soup tastes even better the next day, and you can store it in the fridge for up to 3-4 days or freeze it for up to 3 months.
