- 1 lb ground beef or turkey
- 1 packet taco seasoning
- 1 can diced tomatoes with green chilies
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 4 cups chicken broth
- 8 oz cream cheese
- Shredded cheese for topping
- Cilantro for garnish
- Sour cream for serving
Instructions
- In a large pot, brown the ground beef or turkey over medium heat.
- Add the taco seasoning and stir to combine.
- Mix in the canned tomatoes, black beans, corn, and chicken broth. Stir well.
- Add cream cheese, cut into chunks, and stir until melted and well incorporated.
- Lower the heat, cover, and let it simmer for 20-30 minutes.
- Serve hot, topped with cheese, cilantro, and your preferred toppings.
Notes
Feel free to customize with additional veggies or spicy ingredients. Leftovers can be stored in an airtight container for 3-4 days or frozen for later use.
