Description

A comforting bowl of taco-inspired soup that’s creamy, customizable, and quick to prepare.


Ingredients

  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 can diced tomatoes with green chilies
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 4 cups chicken broth
  • 8 oz cream cheese
  • Shredded cheese for topping
  • Cilantro for garnish
  • Sour cream for serving

Instructions

  1. In a large pot, brown the ground beef or turkey over medium heat.
  2. Add the taco seasoning and stir to combine.
  3. Mix in the canned tomatoes, black beans, corn, and chicken broth. Stir well.
  4. Add cream cheese, cut into chunks, and stir until melted and well incorporated.
  5. Lower the heat, cover, and let it simmer for 20-30 minutes.
  6. Serve hot, topped with cheese, cilantro, and your preferred toppings.
