A delicious, fresh, and flavorful pasta salad perfect for summer gatherings.
Ingredients

- 12 oz pasta (Rotini or penne)
- 1 cup mayonnaise
- ½ cup sour cream
- 2 tablespoons Dijon mustard
- 1 tablespoon vinegar (white or apple cider)
- 1 cup cherry tomatoes, halved
- 1 cup cucumbers, diced
- 1 cup bell peppers (red, yellow, green)
- ½ cup red onion, finely chopped
- 1 cup shredded cheese (Cheddar or mozzarella)
- ¼ cup fresh herbs (parsley or basil)
- Salt and pepper, to taste
- Optional: A splash of hot sauce
Instructions
- Cook the pasta according to the package instructions until al dente. Drain and rinse with cold water.
- In a bowl, combine mayonnaise, sour cream, Dijon mustard, and vinegar, mixing well.
- Chop the veggies and toss them into a large mixing bowl with the cooled pasta. Add the cheese, herbs, and dressing.
- Season with salt and pepper to taste, and gently toss until well coated. Refrigerate for about 30 minutes before serving.
Notes
Garnish with herbs and serve alongside grilled meats or veggie skewers. Can be made into a main course by adding protein.
