A quick and comforting one-pot pasta dish made with ground beef, Rotel tomatoes, and a creamy cheese sauce.

- 1 pound ground beef
- 1 packet Rotel diced tomatoes with green chilies
- 8 oz cream cheese
- 1 cup shredded cheddar cheese
- 1 cup beef broth
- 8 oz pasta (shells, rotini, or your choice)
- Seasonings to taste (garlic powder, salt, pepper, cayenne)
Instructions
- In a large pot over medium heat, brown the ground beef until cooked through, breaking it up as it cooks. Drain any excess fat.
- Add the Rotel tomatoes (with juice), beef broth, and pasta to the pot. Bring to a boil.
- Reduce heat to low, cover, and cook the pasta until al dente, about 8-10 minutes.
- Turn the heat to low again and mix in the cream cheese, stirring until melted. Add the cheddar cheese and stir until creamy. Season to taste.
- Serve in bowls, garnished with fresh herbs if desired.
Notes
Use high-quality cheese for best flavor. Do not overcook the pasta to keep it al dente.
