Description

A quick and comforting one-pot pasta dish made with ground beef, Rotel tomatoes, and a creamy cheese sauce.


Ingredients

  • 1 pound ground beef
  • 1 packet Rotel diced tomatoes with green chilies
  • 8 oz cream cheese
  • 1 cup shredded cheddar cheese
  • 1 cup beef broth
  • 8 oz pasta (shells, rotini, or your choice)
  • Seasonings to taste (garlic powder, salt, pepper, cayenne)

Instructions

  1. In a large pot over medium heat, brown the ground beef until cooked through, breaking it up as it cooks. Drain any excess fat.
  2. Add the Rotel tomatoes (with juice), beef broth, and pasta to the pot. Bring to a boil.
  3. Reduce heat to low, cover, and cook the pasta until al dente, about 8-10 minutes.
  4. Turn the heat to low again and mix in the cream cheese, stirring until melted. Add the cheddar cheese and stir until creamy. Season to taste.
  5. Serve in bowls, garnished with fresh herbs if desired.

Notes

Use high-quality cheese for best flavor. Do not overcook the pasta to keep it al dente.
