A quick and cozy pasta dish featuring creamy Rotel tomatoes and ground beef, perfect for weeknight dinners.

- 1 lb Ground beef
- 12 oz Pasta (any type, preferably penne or rotini)
- 10 oz can Rotel tomatoes
- 8 oz Cream cheese
- 2 cups Cheddar cheese (shredded)
- 1 tsp Garlic powder
- 1 tsp Onion powder
- Salt and pepper to taste
- Optional toppings: Green onions, extra cheese
Instructions
- Cook the Pasta by bringing a pot of salted water to a boil, then following package directions until al dente.
- Brown the Beef in a skillet over medium-high heat, breaking it apart and adding garlic powder and onion powder. Season lightly with salt and pepper.
- Add the Rotel tomatoes to the skillet once the beef is cooked through and simmer for about five minutes.
- Make it Creamy by stirring in the cream cheese until it melts and blends with the tomatoes.
- Combine everything by draining the pasta and adding it to the beef and cream cheese mixture, tossing well to coat.
- Cheese, Please! Stir in the shredded cheddar cheese until melted.
- Serve and Garnish with sliced green onions or extra cheese if desired.
Notes
Feel free to add veggies like spinach or use spicy Rotel for an extra kick. Leftovers reheat well!
