Ingredients

- 1 head of garlic
- 2 tablespoons olive oil (extra virgin)
- 1 cup heavy cream (or half-and-half for a lighter version)
- Zest and juice of 1 lemon
- Salt and pepper to taste
- Fresh parsley or basil for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Cut off the top of the garlic head and drizzle with olive oil. Wrap in aluminum foil and roast for 30-40 minutes until soft.
- In a saucepan over medium heat, add remaining olive oil. Squeeze soft garlic cloves into the pan.
- Stir in heavy cream and let it simmer for about 5 minutes.
- Zest and juice the lemon, then stir into the sauce and season with salt and pepper.
- Cook your pasta according to package instructions, saving about a cup of pasta water.
- Drain the pasta and toss it into the sauce, using pasta water to loosen it if necessary.
- Serve on a plate, garnish with herbs, and add extra lemon zest if desired.
