Description

A deliciously creamy pasta sauce made with roasted garlic and zesty lemon, perfect for elevating your pasta dishes.


Ingredients

  • 1 head of garlic
  • 2 tablespoons olive oil (extra virgin)
  • 1 cup heavy cream (or half-and-half for a lighter version)
  • Zest and juice of 1 lemon
  • Salt and pepper to taste
  • Fresh parsley or basil for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut off the top of the garlic head and drizzle with olive oil. Wrap in aluminum foil and roast for 30-40 minutes until soft.
  3. In a saucepan over medium heat, add remaining olive oil. Squeeze soft garlic cloves into the pan.
  4. Stir in heavy cream and let it simmer for about 5 minutes.
  5. Zest and juice the lemon, then stir into the sauce and season with salt and pepper.
  6. Cook your pasta according to package instructions, saving about a cup of pasta water.
  7. Drain the pasta and toss it into the sauce, using pasta water to loosen it if necessary.
  8. Serve on a plate, garnish with herbs, and add extra lemon zest if desired.
