A quick and delicious creamy ranch pasta salad with taco flavors, perfect for gatherings or family dinners.
Ingredients

- 8 oz pasta (rotini or bowtie)
- 1 cup cherry tomatoes, halved
- 1 cup black beans, rinsed and drained
- 1 cup corn kernels (frozen or canned)
- 1 cup shredded cheese (cheddar or taco blend)
- ½ cup black olives, sliced
- ½ cup green onions, chopped
- 1 packet taco seasoning
- 1 cup ranch dressing
- 1 ½ cups diced cooked chicken (optional)
Instructions
- Boil a big pot of salted water, add pasta and cook until al dente. Reserve 1 cup of pasta water before draining.
- In a large bowl, combine cherry tomatoes, black beans, corn, cheese, black olives, green onions, and cooked pasta.
- In another bowl, whisk together ranch dressing and taco seasoning. Adjust consistency with reserved pasta water if needed.
- Pour ranch mixture over the pasta and toss gently to coat.
- Chill in the fridge for about 30 minutes before serving.
Notes
Serve with grilled chicken, tortilla chips, or sliced avocado. Store leftovers in an airtight container in the fridge for up to 3 days.
