- 1 pound mushrooms (your choice)
- 2–3 tablespoons butter or olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream, half-and-half, or coconut milk
- Salt, to taste
- Pepper, to taste
- 1 teaspoon thyme or rosemary
- Optional: celery and carrots, for added richness
- Optional: a splash of dry white wine
- Optional: grated Parmesan cheese
Instructions
- Sauté those mushrooms by melting butter or olive oil in a pot over medium heat. Cook until golden brown, about 7-10 minutes.
- Toss in the onion and garlic, sautéing until fragrant.
- Add the broth and bring to a simmer; cook for 15 minutes.
- Blend the mixture using an immersion blender or transferring to a regular blender until smooth and creamy.
- Return the blended soup to heat, stir in cream and seasonings.
- Serve in bowls, garnished with herbs or Parmesan, and enjoy!
Notes
For a vegan version, substitute cream with coconut milk and use vegetable broth. Can be stored in the fridge for 3-4 days or frozen for up to 6 months.
