Description

A deliciously creamy mushroom soup that warms your soul, made with fresh mushrooms and rich seasonings.


Ingredients

Scale
  • 1 pound mushrooms (your choice)
  • 23 tablespoons butter or olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream, half-and-half, or coconut milk
  • Salt, to taste
  • Pepper, to taste
  • 1 teaspoon thyme or rosemary
  • Optional: celery and carrots, for added richness
  • Optional: a splash of dry white wine
  • Optional: grated Parmesan cheese

Instructions

  1. Sauté those mushrooms by melting butter or olive oil in a pot over medium heat. Cook until golden brown, about 7-10 minutes.
  2. Toss in the onion and garlic, sautéing until fragrant.
  3. Add the broth and bring to a simmer; cook for 15 minutes.
  4. Blend the mixture using an immersion blender or transferring to a regular blender until smooth and creamy.
  5. Return the blended soup to heat, stir in cream and seasonings.
  6. Serve in bowls, garnished with herbs or Parmesan, and enjoy!

Notes

For a vegan version, substitute cream with coconut milk and use vegetable broth. Can be stored in the fridge for 3-4 days or frozen for up to 6 months.
