- 2 boneless, skinless chicken breasts
- 8 oz mushrooms (button or cremini)
- 1 cup heavy cream
- ½ cup grated Asiago cheese
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Season chicken breasts with salt and pepper. Add to the skillet and sear for 6-7 minutes per side until golden brown and cooked through.
- Remove chicken and let it rest on a plate.
- Add mushrooms to the same skillet and sauté for about 5 minutes until tender.
- Add minced garlic and thyme; sauté for another minute.
- Pour in heavy cream and stir. Add Asiago cheese and stir until melted and creamy.
- Place chicken back in the skillet, coat it with sauce, and simmer for an extra 2-3 minutes.
- Plate, garnish with parsley and enjoy!
Notes
Consider adding spinach or kale for extra nutrition. Feel free to swap out the cheese if needed.
