Description

A classic creamy macaroni salad that’s perfect for picnics, barbecues, or any gathering. Customize it with your favorite mix-ins.


Ingredients

  • 2 cups elbow macaroni
  • 1 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon sugar
  • Salt and pepper to taste
  • 1/2 cup chopped celery
  • 1/2 cup diced bell peppers
  • 1/4 cup chopped green onions
  • 1/4 cup relish or chopped pickles
  • 1/2 cup frozen peas
  • 2 hard-boiled eggs, diced (optional)
  • 1/2 cup cooked and crumbled bacon (optional)

Instructions

  1. Boil a large pot of salted water and cook macaroni until al dente. Drain and rinse under cold water; let cool.
  2. In a mixing bowl, combine mayonnaise, Dijon mustard, vinegar, sugar, salt, and pepper, whisking until smooth.
  3. Add the cooled macaroni to the dressing and mix in the celery, bell peppers, green onions, pickles, and optional ingredients.
  4. Cover and refrigerate for at least 30 minutes to allow flavors to meld before serving cold.

Notes

Letting the salad chill for a few hours or overnight improves the flavors. Adjust seasonings to your taste.
