- 12 oz. Rigatoni Pasta
- 1 lb. Italian Sausage (spicy or mild)
- 1 cup Heavy Cream
- 1/2 cup Parmesan Cheese, grated
- 3 cloves Garlic, minced
- 1 handful Spinach (or broccoli/kale)
- 1 tbsp Olive Oil
- 1 tsp Red Pepper Flakes (optional)
- Salt & Pepper to taste
Instructions
- Bring a large pot of salted water to a boil. Cook rigatoni according to package instructions until al dente. Drain and reserve 1 cup of pasta water.
- In a large skillet, heat olive oil over medium-high heat. Add Italian sausage, breaking it into pieces, and cook until browned and cooked through.
- Add minced garlic to the sausage and sauté for about a minute, then fold in spinach until wilted.
- Pour in heavy cream, mixing well and bringing it to a gentle simmer. Stir in Parmesan cheese and red pepper flakes, adjusting thickness with reserved pasta water if necessary.
- Toss cooked rigatoni into the skillet with the sauce, season with salt and pepper, and mix until well coated.
Notes
Feel free to swap proteins or add your favorite veggies to enhance the dish. For cheese lovers, sprinkle extra Parmesan before serving.
