- 3 medium potatoes, diced
- 2 cups corn (fresh, frozen, or canned)
- 1 cup diced ham
- 1 medium onion, chopped
- 3 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons butter
- Salt and pepper to taste
- A sprinkle of fresh parsley (optional)
Instructions
- Sauté the onion in melted butter over medium heat until translucent (about 5 minutes).
- Add the diced potatoes, corn, and ham, stirring for about 2-3 minutes.
- Pour in the chicken broth, bring to a boil, then reduce heat and simmer until the potatoes are tender (about 15 minutes).
- Stir in the heavy cream, heating through without boiling. Season with salt and pepper to taste.
- Serve in bowls and garnish with fresh parsley if desired.
Notes
Chowder is great made ahead and tastes even better the next day. Customize by using bacon, chicken, or going vegetarian.
