- 1 pound mushrooms (cremini or button)
- 6 cloves garlic, minced
- 1 medium onion, diced
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 tablespoons butter
- Olive oil for sautéing
- Salt & pepper to taste
- Thyme or parsley (optional)
Instructions
- Heat olive oil and butter in a pot over medium heat. Add diced onion and sauté until translucent (about 5 minutes). Add minced garlic and sauté for another minute.
- Stir in sliced mushrooms and cook until they release moisture and shrink (about 10 minutes).
- Add vegetable broth and bring to a gentle simmer for 15 minutes.
- Blend the soup until smooth using an immersion or stand blender. For texture, blend half and mix back in.
- Stir in heavy cream and let it warm through. Adjust seasoning with salt and pepper; add thyme or parsley if desired.
Notes
Serve with crusty bread or a grilled cheese sandwich for a complete meal.
