Description

A comforting and creamy garlic mushroom soup that wraps you in warmth and flavor.


Ingredients

  • 1 pound mushrooms (cremini or button)
  • 6 cloves garlic, minced
  • 1 medium onion, diced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Olive oil for sautéing
  • Salt & pepper to taste
  • Thyme or parsley (optional)

Instructions

  1. Heat olive oil and butter in a pot over medium heat. Add diced onion and sauté until translucent (about 5 minutes). Add minced garlic and sauté for another minute.
  2. Stir in sliced mushrooms and cook until they release moisture and shrink (about 10 minutes).
  3. Add vegetable broth and bring to a gentle simmer for 15 minutes.
  4. Blend the soup until smooth using an immersion or stand blender. For texture, blend half and mix back in.
  5. Stir in heavy cream and let it warm through. Adjust seasoning with salt and pepper; add thyme or parsley if desired.
