Ingredients

  • 1 lb ground beef or turkey
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans
  • 1 can (15 oz) corn
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 cups chicken or vegetable broth
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup heavy cream
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt & pepper to taste

Instructions

  1. In a large pot or Dutch oven, cook the ground beef or turkey over medium heat until browned, about 5-7 minutes.
  2. Add the diced onion and minced garlic; cook until the onion is translucent, about 3-4 minutes.
  3. Stir in the black beans, kidney beans, corn, diced tomatoes, and chicken or vegetable broth.
  4. Sprinkle in the cumin, chili powder, salt, and pepper, and let it simmer for about 15-20 minutes.
  5. Slowly pour in the heavy cream and stir until creamy, simmer for another 5 minutes, adjusting seasonings as needed.
  6. Ladle into bowls and serve with toppings like shredded cheese and fresh cilantro.
