- 1 lb ground beef or turkey
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans
- 1 can (15 oz) corn
- 1 small onion, diced
- 3 cloves garlic, minced
- 2 cups chicken or vegetable broth
- 1 can (10 oz) diced tomatoes with green chilies
- 1 cup heavy cream
- 1 tsp cumin
- 1 tsp chili powder
- Salt & pepper to taste
Instructions
- In a large pot or Dutch oven, cook the ground beef or turkey over medium heat until browned, about 5-7 minutes.
- Add the diced onion and minced garlic; cook until the onion is translucent, about 3-4 minutes.
- Stir in the black beans, kidney beans, corn, diced tomatoes, and chicken or vegetable broth.
- Sprinkle in the cumin, chili powder, salt, and pepper, and let it simmer for about 15-20 minutes.
- Slowly pour in the heavy cream and stir until creamy, simmer for another 5 minutes, adjusting seasonings as needed.
- Ladle into bowls and serve with toppings like shredded cheese and fresh cilantro.
