- 2 cups shredded or cubed chicken breast
- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup frozen or canned corn
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 cup heavy cream
- Tortilla strips, for topping
- Shredded cheese, for garnish
- A handful of cilantro, for garnish
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the diced onion and garlic; sauté for about 4-5 minutes until the onion becomes translucent.
- Toss in the shredded chicken, chili powder, and cumin; stir together until well coated.
- Add the chicken broth, canned tomatoes, and corn; bring to a gentle boil.
- Reduce heat to low and stir in the heavy cream.
- Ladle the soup into bowls and top with tortilla strips, shredded cheese, and fresh cilantro.
Notes
For a pop of flavor, drizzle lime juice over the soup before serving.
