Description

Ingredients

  • 2 cups shredded or cubed chicken breast
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup frozen or canned corn
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 cup heavy cream
  • Tortilla strips, for topping
  • Shredded cheese, for garnish
  • A handful of cilantro, for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and garlic; sauté for about 4-5 minutes until the onion becomes translucent.
  3. Toss in the shredded chicken, chili powder, and cumin; stir together until well coated.
  4. Add the chicken broth, canned tomatoes, and corn; bring to a gentle boil.
  5. Reduce heat to low and stir in the heavy cream.
  6. Ladle the soup into bowls and top with tortilla strips, shredded cheese, and fresh cilantro.

Notes

For a pop of flavor, drizzle lime juice over the soup before serving.
