- 2 cups chicken, shredded (rotisserie chicken works well)
- 6 cups low-sodium chicken broth
- 1 cup heavy cream
- 1 cup diced tomatoes
- 1 cup green chilies
- 1 cup corn
- Spices: cumin, chili powder, garlic powder, salt, and pepper
- Tortilla strips for garnish
- Optional: avocado, cheese, cilantro, lime juice
Instructions
- Prep your ingredients by chopping, dicing, and shredding.
- If using raw chicken, sauté in a large pot with a bit of oil until golden and cooked through. Skip if using rotisserie chicken.
- Add broth, diced tomatoes, chilies, corn, and spices to the pot. Stir and bring to a gentle simmer.
- After about 20 minutes of simmering, add the heavy cream and stir well.
- Ladle the soup into bowls and garnish with tortilla strips and any optional garnishes you prefer.
Notes
For a lighter version, substitute heavy cream with half-and-half or coconut milk. This soup freezes well and can serve as a fantastic meal prep option.
