Description

Ingredients

  • 2 cups chicken, shredded (rotisserie chicken works well)
  • 6 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup diced tomatoes
  • 1 cup green chilies
  • 1 cup corn
  • Spices: cumin, chili powder, garlic powder, salt, and pepper
  • Tortilla strips for garnish
  • Optional: avocado, cheese, cilantro, lime juice

Instructions

  1. Prep your ingredients by chopping, dicing, and shredding.
  2. If using raw chicken, sauté in a large pot with a bit of oil until golden and cooked through. Skip if using rotisserie chicken.
  3. Add broth, diced tomatoes, chilies, corn, and spices to the pot. Stir and bring to a gentle simmer.
  4. After about 20 minutes of simmering, add the heavy cream and stir well.
  5. Ladle the soup into bowls and garnish with tortilla strips and any optional garnishes you prefer.

Notes

For a lighter version, substitute heavy cream with half-and-half or coconut milk. This soup freezes well and can serve as a fantastic meal prep option.
