A rich and satisfying creamy chicken soup that’s perfect for cozying up on a chilly day.
Ingredients

- 1 lb boneless, skinless chicken breasts or thighs
- 4 cups chicken broth
- 1 cup heavy cream
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 onion, chopped
- Salt to taste
- Pepper to taste
- 2 cloves garlic, minced
- 1 tsp thyme
- Optional: Fresh parsley, pasta, or other vegetables
Instructions
- In a large pot, heat a tablespoon of oil over medium heat. Sauté chopped onions, carrots, and celery until onions are translucent, about 5 minutes.
- Add chicken and chicken broth to the pot. Bring to a gentle simmer and cook for about 20 minutes or until chicken is cooked through.
- Remove chicken from the pot and shred it with two forks.
- Lower heat and stir in the heavy cream. Let it simmer for a few minutes.
- Return shredded chicken to the pot, season with salt, pepper, and herbs. Stir and adjust seasoning as needed.
- Ladle into bowls and garnish with fresh herbs if desired. Serve warm.
Notes
For a thicker soup, mix cornstarch with cold water and stir it into the soup as it simmers. If freezing, omit the cream and add it when reheating.
