Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 onion, chopped
  • Salt to taste
  • Pepper to taste
  • 2 cloves garlic, minced
  • 1 tsp thyme
  • Optional: Fresh parsley, pasta, or other vegetables

Instructions

  1. In a large pot, heat a tablespoon of oil over medium heat. Sauté chopped onions, carrots, and celery until onions are translucent, about 5 minutes.
  2. Add chicken and chicken broth to the pot. Bring to a gentle simmer and cook for about 20 minutes or until chicken is cooked through.
  3. Remove chicken from the pot and shred it with two forks.
  4. Lower heat and stir in the heavy cream. Let it simmer for a few minutes.
  5. Return shredded chicken to the pot, season with salt, pepper, and herbs. Stir and adjust seasoning as needed.
  6. Ladle into bowls and garnish with fresh herbs if desired. Serve warm.

Notes

For a thicker soup, mix cornstarch with cold water and stir it into the soup as it simmers. If freezing, omit the cream and add it when reheating.
