Description

A creamy and zesty pasta salad that combines fresh tomatoes, mozzarella, and basil for a delightful dish perfect for any occasion.


Ingredients

  • 8 oz. pasta (fusilli or farfalle)
  • 1 cup cherry tomatoes, halved
  • 8 oz. fresh mozzarella, diced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup olive oil
  • 2 tbsp. balsamic vinegar
  • Salt and pepper, to taste
  • Optional: avocado, grilled chicken, shrimp, crushed red pepper

Instructions

  1. Bring a large pot of salted water to a robust boil. Add the pasta and cook until al dente (8-10 minutes).
  2. Drain the noodles and rinse them under cold water.
  3. In a large bowl, combine the drained pasta, cherry tomatoes, fresh mozzarella, and torn basil leaves.
  4. In a separate small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
  5. Pour the dressing over the pasta salad and toss until well coated.
  6. Adjust seasoning with more salt and pepper if needed.
  7. Cover and chill in the fridge for about 30 minutes before serving.

Notes

This pasta salad can be served as a light main dish or as a side. It tastes even better the next day, so consider making it in advance!
