- 8 oz. pasta (fusilli or farfalle)
- 1 cup cherry tomatoes, halved
- 8 oz. fresh mozzarella, diced
- 1/4 cup fresh basil, chopped
- 1/4 cup olive oil
- 2 tbsp. balsamic vinegar
- Salt and pepper, to taste
- Optional: avocado, grilled chicken, shrimp, crushed red pepper
Instructions
- Bring a large pot of salted water to a robust boil. Add the pasta and cook until al dente (8-10 minutes).
- Drain the noodles and rinse them under cold water.
- In a large bowl, combine the drained pasta, cherry tomatoes, fresh mozzarella, and torn basil leaves.
- In a separate small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
- Pour the dressing over the pasta salad and toss until well coated.
- Adjust seasoning with more salt and pepper if needed.
- Cover and chill in the fridge for about 30 minutes before serving.
Notes
This pasta salad can be served as a light main dish or as a side. It tastes even better the next day, so consider making it in advance!
