- 8 oz Fettuccine or penne pasta
- 2 boneless chicken breasts
- 2 tbsp Cajun seasoning
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 1 bell pepper, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tbsp butter
Instructions
- Boil water in a large pot and add a generous pinch of salt.
- Cook your pasta according to package instructions until al dente and reserve 1 cup of pasta water before draining.
- Season the chicken with Cajun seasoning and heat olive oil and butter in a skillet over medium heat.
- Add the chicken and cook until golden brown and cooked through, about 5-7 minutes per side, then set aside.
- In the same skillet, sauté bell peppers, onions, and garlic until soft, about 4-5 minutes.
- Pour in heavy cream, bring to a gentle simmer, and stir in Parmesan cheese and more Cajun seasoning to taste.
- Slice the cooked chicken and add it along with the drained pasta to the skillet, tossing everything together to coat.
- Plate and garnish with additional Parmesan and parsley if desired.
Notes
Adjust the spice level by varying the amount of Cajun seasoning. Feel free to use shrimp instead of chicken for a seafood twist.
