Description

A deliciously creamy and spicy buffalo chicken casserole made with cauliflower, perfect for satisfying cravings without the guilt.


Ingredients

  • 1 head of cauliflower, roughly chopped
  • 2 cups shredded cooked chicken
  • 1 cup Greek yogurt
  • 1 cup sharp cheddar cheese
  • ½ cup buffalo sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Green onions for garnishing (optional)
  • Olive oil
  • Cooking spray or butter

Instructions

  1. Steam the chopped cauliflower until tender, about 5–7 minutes.
  2. In a large bowl, combine steamed cauliflower, Greek yogurt, garlic powder, onion powder, and seasoning. Blend until creamy.
  3. Fold in the shredded chicken and buffalo sauce until well mixed.
  4. If desired, add some cheddar cheese to the mixture.
  5. Preheat the oven to 350°F (175°C).
  6. Grease a baking dish (9×13 inches) with cooking spray or butter.
  7. Pour the mixture into the baking dish and spread evenly.
  8. If you reserved cheese, sprinkle it on top now.
  9. Bake for 25–30 minutes, until golden and bubbly.
  10. Let cool briefly, garnish with green onions and extra buffalo sauce if desired, then serve.

Notes

This casserole can be served as a main dish or alongside greens. Store leftovers in an airtight container for 3–5 days in the fridge or freeze for 2–3 months.
