A deliciously creamy and spicy buffalo chicken casserole made with cauliflower, perfect for satisfying cravings without the guilt.

- 1 head of cauliflower, roughly chopped
- 2 cups shredded cooked chicken
- 1 cup Greek yogurt
- 1 cup sharp cheddar cheese
- ½ cup buffalo sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Green onions for garnishing (optional)
- Olive oil
- Cooking spray or butter
Instructions
- Steam the chopped cauliflower until tender, about 5–7 minutes.
- In a large bowl, combine steamed cauliflower, Greek yogurt, garlic powder, onion powder, and seasoning. Blend until creamy.
- Fold in the shredded chicken and buffalo sauce until well mixed.
- If desired, add some cheddar cheese to the mixture.
- Preheat the oven to 350°F (175°C).
- Grease a baking dish (9×13 inches) with cooking spray or butter.
- Pour the mixture into the baking dish and spread evenly.
- If you reserved cheese, sprinkle it on top now.
- Bake for 25–30 minutes, until golden and bubbly.
- Let cool briefly, garnish with green onions and extra buffalo sauce if desired, then serve.
Notes
This casserole can be served as a main dish or alongside greens. Store leftovers in an airtight container for 3–5 days in the fridge or freeze for 2–3 months.
