Description

A delicious and easy pasta salad loaded with crispy bacon, cheddar cheese, and ranch dressing that’s perfect for any occasion.


Ingredients

  • 8 ounces rotini or penne pasta
  • 6 slices bacon, cooked crispy and crumbled
  • 1 cup cheddar cheese, shredded
  • 1 cup ranch dressing
  • ½ cup green onions, chopped
  • 1 red bell pepper, diced
  • Salt and pepper, to taste
  • Fresh herbs (parsley or dill), optional

Instructions

  1. Bring a large pot of salted water to boil. Cook pasta according to package instructions until al dente. Drain and rinse with cold water.
  2. Cook the bacon until crispy, crumble it, and set aside.
  3. In a large mixing bowl, combine the cooled pasta, crumbled bacon, cheddar cheese, green onions, and red bell pepper. Drizzle ranch dressing over the top and mix well.
  4. Season with salt and pepper to taste, then cover and chill in the fridge for at least 30 minutes.

Notes

Great make-ahead dish; can be stored in the fridge for up to 2 days. Add protein like rotisserie chicken or shrimp to elevate the meal.
