A delicious and easy pasta salad loaded with crispy bacon, cheddar cheese, and ranch dressing that’s perfect for any occasion.
Ingredients

- 8 ounces rotini or penne pasta
- 6 slices bacon, cooked crispy and crumbled
- 1 cup cheddar cheese, shredded
- 1 cup ranch dressing
- ½ cup green onions, chopped
- 1 red bell pepper, diced
- Salt and pepper, to taste
- Fresh herbs (parsley or dill), optional
Instructions
- Bring a large pot of salted water to boil. Cook pasta according to package instructions until al dente. Drain and rinse with cold water.
- Cook the bacon until crispy, crumble it, and set aside.
- In a large mixing bowl, combine the cooled pasta, crumbled bacon, cheddar cheese, green onions, and red bell pepper. Drizzle ranch dressing over the top and mix well.
- Season with salt and pepper to taste, then cover and chill in the fridge for at least 30 minutes.
Notes
Great make-ahead dish; can be stored in the fridge for up to 2 days. Add protein like rotisserie chicken or shrimp to elevate the meal.
