Description

A vibrant and delicious Cranberry Apple Quinoa Salad that’s easy to make and perfect for any occasion.


Ingredients

Scale
  • 1 cup quinoa, rinsed
  • 2 cups water or vegetable broth
  • 1 medium apple, chopped
  • 1/2 cup dried cranberries
  • 1/4 cup chopped pecans or walnuts
  • 1/4 cup green onions (scallions), chopped
  • 1 cup kale or spinach, roughly chopped
  • 3 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey or maple syrup
  • Salt and pepper to taste

Instructions

  1. Boil Water: Combine the quinoa and water or broth in a medium saucepan. Bring it to a boil.
  2. Simmer: Reduce heat to low, cover, and let it simmer for about 15 minutes, or until all the liquid is absorbed.
  3. Fluff: Once cooked, fluff with a fork and let it cool.
  4. Chop up all the salad ingredients while the quinoa cools.
  5. In a large bowl, combine the cooled quinoa, apple chunks, cranberries, nuts, green onions, and kale or spinach.
  6. In a small bowl, whisk together the olive oil, apple cider vinegar, honey/maple syrup, salt, and pepper.
  7. Taste test the dressing and adjust as preferred.
  8. Pour the dressing over the salad mix and toss gently until combined.

Notes

This salad is perfect for meal prep, as it gets even better as it sits. You can swap out fruits based on the season.
