Description
Tender beef roast slow-cooked with potatoes, carrots, and herbs — the perfect cozy comfort meal.
Ingredients
3–4 lb chuck roast
4–5 large carrots
6–8 baby potatoes
1 onion
3 cloves garlic
2 cups beef broth
1 tbsp Worcestershire sauce
2 tbsp tomato paste
Salt, pepper, thyme
Instructions
1. Sear roast on all sides.
2. Layer vegetables in Crockpot.
3. Place roast on top.
4. Pour broth mixture over.
5. Cook on LOW 8–9 hours.
6. Serve warm with juices.
Notes
Add red wine for richer flavor. Swap potatoes for sweet potatoes for a twist.
