Ingredients

- 1 1/2 cups cottage cheese
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1 small cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley or cilantro, chopped
- 2 tbsp olive oil
- 1 tbsp lemon juice (fresh)
- 1 tsp Dijon mustard
- 1/2 tsp ground cumin (optional)
- Salt and pepper to taste
- Optional: a handful of baby spinach or arugula
Instructions
- Chop tomatoes, cucumber, onion, and herbs.
- Rinse and drain chickpeas, pat dry.
- Whisk olive oil, lemon juice, Dijon, cumin, salt, and pepper in a small bowl to make the dressing.
- Combine cottage cheese, chickpeas, and veggies in a large bowl. Pour dressing over and toss gently.
- Garnish with parsley and a crack of black pepper. Serve immediately or chill if preferred.
Notes
For a creamier dressing, swap 1-2 tablespoons of olive oil for Greek yogurt or add a splash of water. Adjust flavors to taste.
