Ingredients

  • 1 cup cottage cheese
  • 1 ½ cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • ½ cup milk (or a plant-based alternative)
  • 2 eggs
  • 2 tbsp honey or sugar
  • Optional: herbs, cheese, or nuts

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, whisk together the cottage cheese, eggs, and milk.
  3. In another bowl, mix the flour, baking powder, and salt.
  4. Pour the wet ingredients into the dry and fold until just combined.
  5. If adding extras like herbs or cheese, mix them in now.
  6. Grease a loaf pan and pour the batter in.
  7. Bake for about 45-50 minutes or until golden brown and a toothpick comes out clean.
  8. Cool, slice, and enjoy warm with butter or toasted.

Notes
