Ingredients
1 cup cottage cheese (full-fat preferred)
1 egg
1 cup self-rising flour (or almond flour + 1 tsp baking powder)
½ tsp salt
1 tsp baking powder (if using almond flour)
Optional: everything seasoning, sesame seeds, shredded cheese
Instructions
Preheat oven to 375°F and line a baking sheet with parchment.
Mix cottage cheese, egg, and salt in a bowl until smooth.
Stir in flour until a sticky dough forms.
Divide into 4–6 portions. Shape into bagels with wet hands.
Top with seasoning or cheese.
Bake 22–25 minutes until golden and firm.
Cool 10 minutes before slicing
Notes
Use almond flour with a binder for a gluten-free option.
Store in an airtight container for 2–5 days or freeze for 3 months.
