Description

Ingredients

  • 4 cups Fresh or Frozen Corn
  • 2 medium Potatoes, diced
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 4 cups Vegetable or Chicken Broth
  • 1 cup Heavy Cream or Milk
  • 2 tablespoons Butter
  • Salt and Pepper, to taste
  • Optional: Crisp bacon bits, chopped green onions, or a sprinkle of cheese

Instructions

  1. Prep your veggies by chopping potatoes, onions, and garlic.
  2. Sauté the onion and garlic in melted butter over medium heat for about 5 minutes.
  3. Add the diced potatoes and pour in the broth. Bring to a boil, then simmer until potatoes are tender.
  4. Incorporate corn and heavy cream, and let heat through for 5 minutes.

Notes
