- 2 pounds beef chuck, cut into 1-inch chunks
- 4 cups beef broth
- 3 medium carrots, sliced
- 2 large potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
- Olive oil for browning the beef
- A splash of red wine (optional)
Instructions
- Heat a few tablespoons of olive oil in a large pot over medium-high heat. Toss in the beef chunks and sear them on all sides until golden brown.
- Remove the beef and add the onions and garlic to the pot. Cook until the onions are translucent.
- Add the tomato paste, beef broth, red wine, carrots, and potatoes. Sprinkle in the thyme and rosemary.
- Bring the stew to a boil, then lower the heat and let it simmer for about 90 to 120 minutes.
- Before serving, adjust the seasoning with salt and pepper.
- Ladle the stew into bowls and serve with crusty bread.
