Ingredients

  • 2 pounds beef chuck, cut into 1-inch chunks
  • 4 cups beef broth
  • 3 medium carrots, sliced
  • 2 large potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste
  • Olive oil for browning the beef
  • A splash of red wine (optional)

Instructions

  1. Heat a few tablespoons of olive oil in a large pot over medium-high heat. Toss in the beef chunks and sear them on all sides until golden brown.
  2. Remove the beef and add the onions and garlic to the pot. Cook until the onions are translucent.
  3. Add the tomato paste, beef broth, red wine, carrots, and potatoes. Sprinkle in the thyme and rosemary.
  4. Bring the stew to a boil, then lower the heat and let it simmer for about 90 to 120 minutes.
  5. Before serving, adjust the seasoning with salt and pepper.
  6. Ladle the stew into bowls and serve with crusty bread.
