- 8 oz bowtie or fusilli pasta
- 1 cup cherry tomatoes, halved
- 1 cup mozzarella balls (bocconcini)
- 1/4 cup fresh basil, chopped
- 2 tbsp extra virgin olive oil
- 2 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions
- Bring a large pot of salted water to a boil. Add pasta and cook until al dente, then drain and rinse under cold water.
- Chop the cherry tomatoes and basil.
- In a large bowl, combine the cooked pasta, cherry tomatoes, mozzarella balls, and basil. Drizzle with olive oil and balsamic vinegar, season with salt and pepper, and toss gently.
- Refrigerate for about 30 minutes before serving to allow flavors to mingle.
Notes
For extra flavor, mix in different herbs like parsley or mint. You can also add protein like grilled chicken or chickpeas.
