Description
A comforting and flavorful cod dish served with a smoky roasted red pepper sauce.
Ingredients
Scale
- 4 large red bell peppers
- 2 cloves of garlic
- 1 tablespoon olive oil
- A sprinkle of salt and pepper
- 1 teaspoon of Italian herbs
- A splash of lemon juice
- 4 cod fillets (about 6 ounces each)
- Salt and pepper to taste
- 1 tablespoon olive oil for cooking
Instructions
- Toss the red bell peppers on a baking sheet. Drizzle with olive oil, sprinkle with salt, and let them roast in a preheated oven at 425°F (220°C) for about 20-25 minutes until they’re beautifully charred.
- Peel off the skins of the roasted peppers and toss them into a blender along with garlic, herbs, and lemon juice. Blend until it’s silky smooth.
- Taste the sauce and adjust the seasoning if needed. Optionally, add a pinch of crushed red pepper for some kick.
- Sprinkle salt and pepper on each cod fillet.
- Heat olive oil in a large skillet over medium-high heat.
- Place the cod in the skillet and cook for about 3-4 minutes on each side until it’s golden brown and flakes easily with a fork.
- Reduce the heat and pour the roasted red pepper sauce over the cod. Let it simmer for another 2–3 minutes for flavor infusion.
Notes
This dish pairs well with rice or quinoa, and you can garnish with fresh parsley or a squeeze of lemon for added freshness.
