Description

A delicious and creamy dish combining coconut milk, aromatic spices, and tender chicken, perfect for a comforting meal.


Ingredients

Scale
  • 1 pound chicken breast or thighs
  • 1 can coconut milk
  • 2 tablespoons curry powder
  • 3 cloves garlic, minced
  • 1 tablespoon fresh grated ginger
  • 1 cup chicken broth
  • 2 tablespoons soy sauce
  • Noodles of choice (rice noodles, egg noodles, or whole wheat)
  • Vegetables (bell peppers, spinach, snap peas)
  • Juice of 1 lime

Instructions

  1. Cook the chicken in a large pot with a splash of oil over medium heat for 5-7 minutes until golden and cooked through. Set aside.
  2. Sauté minced garlic and ginger in the same pot for 1 minute.
  3. Add curry powder and stir for another minute.
  4. Pour in coconut milk and chicken broth, whisk until smooth, and bring to a simmer.
  5. Combine cooked chicken and noodles, simmer for 5-10 minutes.
  6. Add vegetables and simmer until slightly wilted.
  7. Remove from heat and squeeze lime juice in just before serving.

Notes

Feel free to customize with different proteins or vegetables. For spice, add red pepper flakes or jalapeños.
