- 1 pound chicken breast or thighs
- 1 can coconut milk
- 2 tablespoons curry powder
- 3 cloves garlic, minced
- 1 tablespoon fresh grated ginger
- 1 cup chicken broth
- 2 tablespoons soy sauce
- Noodles of choice (rice noodles, egg noodles, or whole wheat)
- Vegetables (bell peppers, spinach, snap peas)
- Juice of 1 lime
Instructions
- Cook the chicken in a large pot with a splash of oil over medium heat for 5-7 minutes until golden and cooked through. Set aside.
- Sauté minced garlic and ginger in the same pot for 1 minute.
- Add curry powder and stir for another minute.
- Pour in coconut milk and chicken broth, whisk until smooth, and bring to a simmer.
- Combine cooked chicken and noodles, simmer for 5-10 minutes.
- Add vegetables and simmer until slightly wilted.
- Remove from heat and squeeze lime juice in just before serving.
Notes
Feel free to customize with different proteins or vegetables. For spice, add red pepper flakes or jalapeños.
