Description

Delicious meatballs with rice smothered in a tangy tomato sauce, perfect for a nostalgic meal.


Ingredients

  • 1 pound ground beef (or your meat of choice)
  • ½ cup uncooked long-grain rice
  • 1 small onion, finely chopped
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 can (15 oz) diced tomatoes
  • 1 cup beef broth
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the ground meat, uncooked rice, chopped onion, egg, garlic powder, and a sprinkle of salt and pepper. Mix until well combined.
  2. Form the mixture into golf ball-sized meatballs.
  3. In a large skillet over medium heat, add a bit of oil and brown the meatballs on all sides for about 5 minutes.
  4. Pour the canned diced tomatoes (juice and all) into the pan, along with the beef broth, and gently stir to combine.
  5. Cover the skillet and let it simmer for about 30 minutes.
  6. Serve the meatballs over mashed potatoes, rice, or pasta.

Notes

Don’t skimp on seasoning! Add herbs like oregano or basil for extra flavor. Use leftovers creatively, like chopped veggies for added texture.
