A versatile classic pasta salad that’s easy to make and perfect for any occasion.
Ingredients

- 12 ounces pasta (rotini, penne, or fusilli)
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, chopped
- 1 bell pepper, diced
- ¾ cup red onion, finely chopped
- 1 cup protein (grilled chicken, chickpeas, or salami)
- 1 cup cheese (mozzarella balls or feta)
- ½ cup olive oil
- ¼ cup red wine vinegar or lemon juice
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and rinse under cold water.
- Chop all veggies and protein while the pasta cools.
- In a small bowl, whisk together olive oil, vinegar, Italian seasoning, salt, and pepper.
- Toss the cooled pasta, veggies, protein, and cheese in a big bowl. Drizzle the dressing over the top and mix until coated.
- Let it chill in the fridge for at least 30 minutes. Serve and enjoy!
Notes
Customize with herbs, different dressings, or add some heat with jalapeños.
