Description

A versatile classic pasta salad that’s easy to make and perfect for any occasion.


Ingredients

Scale
  • 12 ounces pasta (rotini, penne, or fusilli)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, chopped
  • 1 bell pepper, diced
  • ¾ cup red onion, finely chopped
  • 1 cup protein (grilled chicken, chickpeas, or salami)
  • 1 cup cheese (mozzarella balls or feta)
  • ½ cup olive oil
  • ¼ cup red wine vinegar or lemon juice
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and rinse under cold water.
  2. Chop all veggies and protein while the pasta cools.
  3. In a small bowl, whisk together olive oil, vinegar, Italian seasoning, salt, and pepper.
  4. Toss the cooled pasta, veggies, protein, and cheese in a big bowl. Drizzle the dressing over the top and mix until coated.
  5. Let it chill in the fridge for at least 30 minutes. Serve and enjoy!

Notes

Customize with herbs, different dressings, or add some heat with jalapeños.
