Ingredients

- 6 large potatoes (Russet or Yukon Gold)
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 1 medium onion, diced
- 3 cloves garlic, minced
- Salt and pepper, to taste
- Cooked bacon, crumbled
- Shredded cheddar cheese
- Sour cream
- Chopped green onions or chives
- Fresh parsley, for garnish
Instructions
- Peel and chop potatoes into bite-sized pieces, rinse, and set aside.
- In a large pot, heat olive oil over medium heat and sauté diced onion until soft. Add minced garlic and sauté for 1 minute.
- Add chopped potatoes and broth, bring to a boil, then reduce to simmer for about 20 minutes until potatoes are tender.
- Use an immersion blender to blend soup to desired consistency.
- Stir in heavy cream, season with salt and pepper, and heat through.
- Ladle soup into bowls and top with bacon, cheese, sour cream, green onions, and parsley.
