Description

A comforting and creamy potato soup loaded with delicious toppings for a perfect cozy meal.


Ingredients

  • 6 large potatoes (Russet or Yukon Gold)
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • Salt and pepper, to taste
  • Cooked bacon, crumbled
  • Shredded cheddar cheese
  • Sour cream
  • Chopped green onions or chives
  • Fresh parsley, for garnish

Instructions

  1. Peel and chop potatoes into bite-sized pieces, rinse, and set aside.
  2. In a large pot, heat olive oil over medium heat and sauté diced onion until soft. Add minced garlic and sauté for 1 minute.
  3. Add chopped potatoes and broth, bring to a boil, then reduce to simmer for about 20 minutes until potatoes are tender.
  4. Use an immersion blender to blend soup to desired consistency.
  5. Stir in heavy cream, season with salt and pepper, and heat through.
  6. Ladle soup into bowls and top with bacon, cheese, sour cream, green onions, and parsley.
