A vibrant and delicious pasta salad featuring fresh vegetables, cheese, and Italian dressing, perfect for gatherings and meal prep.
Ingredients

- 1 pound rotini or fusilli pasta
- 1 pint cherry tomatoes, halved
- 1 medium cucumber, chopped
- 1–2 assorted bell peppers, diced
- 1 small red onion, finely chopped
- ¾ cup black olives, sliced
- 1 cup cubed mozzarella or feta cheese
- 1 cup Italian dressing
- Optional: sliced pepperoni or salami, artichoke hearts, fresh basil or parsley
Instructions
- Boil 4-5 quarts of salted water, then add pasta. Cook according to package instructions until al dente. Drain and rinse under cold water.
- While pasta is cooking, chop the vegetables into even-sized pieces.
- In a large mixing bowl, combine cooled pasta, cherry tomatoes, cucumber, bell peppers, red onion, black olives, and cheese.
- Pour in Italian dressing and toss lightly to coat all ingredients.
- Cover and refrigerate for at least 30 minutes before serving.
- Fluff with a fork before serving, and season with salt and pepper if needed.
Notes
Fresh ingredients enhance the flavor. Dressing can be adjusted based on preference.
