Description

A vibrant and delicious pasta salad featuring fresh vegetables, cheese, and Italian dressing, perfect for gatherings and meal prep.


Ingredients

Scale
  • 1 pound rotini or fusilli pasta
  • 1 pint cherry tomatoes, halved
  • 1 medium cucumber, chopped
  • 12 assorted bell peppers, diced
  • 1 small red onion, finely chopped
  • ¾ cup black olives, sliced
  • 1 cup cubed mozzarella or feta cheese
  • 1 cup Italian dressing
  • Optional: sliced pepperoni or salami, artichoke hearts, fresh basil or parsley

Instructions

  1. Boil 4-5 quarts of salted water, then add pasta. Cook according to package instructions until al dente. Drain and rinse under cold water.
  2. While pasta is cooking, chop the vegetables into even-sized pieces.
  3. In a large mixing bowl, combine cooled pasta, cherry tomatoes, cucumber, bell peppers, red onion, black olives, and cheese.
  4. Pour in Italian dressing and toss lightly to coat all ingredients.
  5. Cover and refrigerate for at least 30 minutes before serving.
  6. Fluff with a fork before serving, and season with salt and pepper if needed.

Notes

Fresh ingredients enhance the flavor. Dressing can be adjusted based on preference.
