Description

Ingredients

  • 1 pound boneless, skinless chicken (thighs or breasts)
  • 8 ounces noodles (egg noodles, rice noodles, or your choice)
  • 6 cups broth (homemade or store-bought)
  • 2 tablespoons minced fresh ginger
  • 4 cloves minced garlic
  • 2 sliced carrots
  • 2 sliced celery stalks
  • 1 medium diced onion
  • 2 tablespoons soy sauce
  • Green onions for garnish
  • Salt and pepper to taste
  • Optional: spinach, lime juice, sriracha

Instructions

  1. In a large pot, add a splash of olive oil and sauté diced onion over medium heat until soft and translucent, about 3-5 minutes.
  2. Add minced garlic and ginger, stirring for a moment until fragrant.
  3. Incorporate sliced carrots and celery, cooking for another 5 minutes until softened.
  4. Add the chicken to the pot and cook until no longer pink, about 5-7 minutes.
  5. Pour in the broth and soy sauce, bringing the mixture to a gentle boil.
  6. Add the noodles and cook according to package instructions, making sure not to overcook them.
  7. Adjust seasoning with salt and pepper, then serve garnished with chopped green onions and a splash of lime juice if desired.

Notes

Chop veggies in advance for quick cooking. Store leftovers separately from noodles to prevent them from becoming mushy.
