- 8 ounces noodles (egg noodles, rice noodles, or your choice)
- 6 cups broth (homemade or store-bought)
- 2 tablespoons minced fresh ginger
- 4 cloves minced garlic
- 2 sliced carrots
- 2 sliced celery stalks
- 1 medium diced onion
- 2 tablespoons soy sauce
- Green onions for garnish
- Salt and pepper to taste
- Optional: spinach, lime juice, sriracha
Instructions
- In a large pot, add a splash of olive oil and sauté diced onion over medium heat until soft and translucent, about 3-5 minutes.
- Add minced garlic and ginger, stirring for a moment until fragrant.
- Incorporate sliced carrots and celery, cooking for another 5 minutes until softened.
- Add the chicken to the pot and cook until no longer pink, about 5-7 minutes.
- Pour in the broth and soy sauce, bringing the mixture to a gentle boil.
- Add the noodles and cook according to package instructions, making sure not to overcook them.
- Adjust seasoning with salt and pepper, then serve garnished with chopped green onions and a splash of lime juice if desired.
Notes
Chop veggies in advance for quick cooking. Store leftovers separately from noodles to prevent them from becoming mushy.
