- 8 ounces egg noodles
- 6 cups chicken broth
- 2 tablespoons freshly grated ginger
- 5 cloves minced garlic
- 1 cup sliced carrots
- 1 cup chopped celery

- Soy sauce to taste
- Fresh parsley or cilantro for garnish
Instructions
- Prep your ingredients: Chop up veggies, shred chicken, and get garlic and ginger ready.
- Heat olive oil in a large pot over medium heat. Add ginger and garlic.
- Add sliced carrots and chopped celery, stirring for about 5 minutes.
- Pour in the chicken broth and bring to a boil.
- Add the noodles and cook according to package instructions, stirring occasionally.
- Add shredded chicken and let simmer for a few minutes.
- Season with salt, pepper, and soy sauce. Adjust to taste.
- Ladle into bowls and garnish with fresh herbs.
Notes
If the soup is too salty, add a splash of water or more noodles to balance it. For more flavor, increase the ginger and garlic.
