Ingredients

  • 8 ounces egg noodles
  • 6 cups chicken broth
  • 2 tablespoons freshly grated ginger
  • 5 cloves minced garlic
  • 1 cup sliced carrots
  • 1 cup chopped celery
  • Salt to taste
  • Pepper to taste
  • Soy sauce to taste
  • Fresh parsley or cilantro for garnish

Instructions

  1. Prep your ingredients: Chop up veggies, shred chicken, and get garlic and ginger ready.
  2. Heat olive oil in a large pot over medium heat. Add ginger and garlic.
  3. Add sliced carrots and chopped celery, stirring for about 5 minutes.
  4. Pour in the chicken broth and bring to a boil.
  5. Add the noodles and cook according to package instructions, stirring occasionally.
