Description
A delicious and heartwarming homemade chicken noodle soup, perfect for chasing away the chill of winter or comforting a cold.
Ingredients

- 1 whole chicken (or about 4 cups of shredded rotisserie chicken)
- 4 cups of chicken broth
- 2 cups of water
- 2–3 medium carrots, diced
- 2 stalks of celery, diced
- 1 medium onion, chopped
- 3 cloves of garlic, minced
- 2 cups of egg noodles
- Salt and pepper to taste
- Fresh herbs like thyme or parsley
Instructions
- In a large pot, combine the chicken, chicken broth, and water. Bring to a boil.
- Reduce heat and simmer for about 30 minutes.
- Add the diced carrots, celery, and chopped onion and simmer for another 15-20 minutes until tender.
- If using a whole chicken, remove it, let it cool, shred the meat, and return it to the pot.
- Add the minced garlic and simmer for an additional 5 minutes.
- Stir in the egg noodles and simmer until al dente, about 8-10 minutes. Season with salt, pepper, and fresh herbs to taste.
- Ladle the soup into bowls and serve warm, optionally topped with extra herbs.
Notes
For variations, consider adding cream for a creamy version, coconut milk and curry paste for a Thai twist, or spinach and zucchini for more veggies.
