Deliciously warm muffins that combine the sticky sweetness of cinnamon rolls with a protein boost.
Ingredients

- 1 cup rolled oats
- 1 scoop vanilla protein powder
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg (optional)
- 1 egg
- 1/2 cup unsweetened applesauce
- 1/4 cup pure maple syrup
- 1/4 cup milk (dairy or non-dairy)
- 1/2 cup Greek yogurt
- 1/4 cup chopped nuts (or chocolate chips)
- 1–2 tablespoons coconut sugar for topping
Instructions
- Preheat oven to 350°F (175°C).
- Mix dry ingredients: rolled oats, protein powder, baking powder, cinnamon, and nutmeg in a bowl.
- Mix wet ingredients: egg, applesauce, maple syrup, milk, and Greek yogurt until smooth in another bowl.
- Combine the dry ingredients into the wet ones until just combined.
- Divide the batter into a muffin tin lined with paper liners or greased.
- Add coconut sugar on top for topping.
- Bake for about 18-20 minutes, or until a toothpick comes out clean.
- Cool in the pan before transferring to a wire rack.
Notes
Store in an airtight container for up to 3 days or in the fridge for about a week. Can be frozen for up to two months.
