Description

Deliciously warm muffins that combine the sticky sweetness of cinnamon rolls with a protein boost.


Ingredients

Scale
  • 1 cup rolled oats
  • 1 scoop vanilla protein powder
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg (optional)
  • 1 egg
  • 1/2 cup unsweetened applesauce
  • 1/4 cup pure maple syrup
  • 1/4 cup milk (dairy or non-dairy)
  • 1/2 cup Greek yogurt
  • 1/4 cup chopped nuts (or chocolate chips)
  • 12 tablespoons coconut sugar for topping

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix dry ingredients: rolled oats, protein powder, baking powder, cinnamon, and nutmeg in a bowl.
  3. Mix wet ingredients: egg, applesauce, maple syrup, milk, and Greek yogurt until smooth in another bowl.
  4. Combine the dry ingredients into the wet ones until just combined.
  5. Divide the batter into a muffin tin lined with paper liners or greased.
  6. Add coconut sugar on top for topping.
  7. Bake for about 18-20 minutes, or until a toothpick comes out clean.
  8. Cool in the pan before transferring to a wire rack.

Notes

Store in an airtight container for up to 3 days or in the fridge for about a week. Can be frozen for up to two months.
