Ingredients

- 2 ¾ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 cup unsalted butter, softened
- 1 ½ cups granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon peppermint extract
- Food coloring (red and green)
Instructions
- Preheat the oven to 350°F (175°C).
- In a medium bowl, whisk together flour, baking powder, and salt.
- Cream together the butter and sugar until light and fluffy, then add the egg and extracts.
- Gradually mix the dry ingredients into the wet ingredients until just combined.
- Divide the dough in half, adding red food coloring to one half and green to the other.
- Roll each colored dough between two sheets of parchment paper into rectangles about ¼ inch thick.
- Layer the green dough on top of the red and roll into a log using the parchment.
- Wrap the log in plastic wrap and chill in the fridge for 1-2 hours.
- Once chilled, slice into ¼ inch rounds and place on a lined baking sheet.
- Bake for 10-12 minutes until edges are lightly golden, then let cool.
Notes
Keep your dough chilled for easier slicing. Experiment with flavors and decorate them as desired.
