Description

Delicious and visually stunning Christmas pinwheel cookies with vibrant colors and impressive flavor combinations.


Ingredients

Scale
  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract
  • Food coloring (red and green)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. Cream together the butter and sugar until light and fluffy, then add the egg and extracts.
  4. Gradually mix the dry ingredients into the wet ingredients until just combined.
  5. Divide the dough in half, adding red food coloring to one half and green to the other.
  6. Roll each colored dough between two sheets of parchment paper into rectangles about ¼ inch thick.
  7. Layer the green dough on top of the red and roll into a log using the parchment.
  8. Wrap the log in plastic wrap and chill in the fridge for 1-2 hours.
  9. Once chilled, slice into ¼ inch rounds and place on a lined baking sheet.
  10. Bake for 10-12 minutes until edges are lightly golden, then let cool.
