Description

Rich chocolate cookies with a bold coffee flavor that will satisfy your cravings for both chocolate and coffee.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tablespoon instant espresso powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chunks

Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, cocoa powder, instant espresso powder, baking soda, and salt.
  3. In a large bowl, cream the softened butter with the granulated and brown sugars until light and fluffy.
  4. Beat in the egg and vanilla extract until fully combined.
  5. Gradually add the dry ingredients to the wet ingredients and mix until the flour just disappears.
  6. Fold in the semi-sweet chocolate chunks until evenly distributed.
  7. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges look set. Let cool on the baking sheet for 5 minutes before moving to a wire rack.

Notes

For a gluten-free version, use a gluten-free flour blend. You can also reduce the sugar for a lighter version.
