- 1 pound boneless, skinless chicken breast or thighs
- 200 grams egg noodles or rice noodles
- 6 cups chicken broth
- 1 cup chopped carrots
- 1 cup chopped celery
- 1/4 cup chopped green onions
- 1 teaspoon minced ginger
- 3 cloves minced garlic
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil (optional)
- Salt and pepper to taste
- Chili flakes (optional)
- Fresh cilantro for garnish (optional)
- Lime wedges for serving (optional)
Instructions
- In a pot, bring water to a boil and cook the chicken for 10-15 minutes until no longer pink. Shred and set aside.
- Heat sesame oil in a large pot over medium heat and sauté minced ginger, garlic, and salt for about 2 minutes until fragrant.
- Add chopped carrots and celery, cooking for about 5 minutes. Pour in chicken broth and bring to a simmer.
- Add noodles and cook according to package instructions, about 5-8 minutes. Stir in shredded chicken and soy sauce.
- Adjust seasoning with salt and pepper before serving, and top with chopped green onions and cilantro.
Notes
Feel free to customize with vegetables like bok choy or mushrooms, or add sriracha for a spicy kick.
