Description

A colorful and flavorful fusion of crunchy veggies, seasoned chicken, and pasta, perfect for any occasion.


Ingredients

  • 1 lb Chicken Breast, grilled or sautéed
  • 8 oz Pasta (elbow macaroni or rotini)
  • 1 cup Bell Peppers, chopped
  • 1 cup Cherry Tomatoes, halved
  • 1/2 cup Red Onions, chopped
  • 1 cup Corn
  • 1 can Black Beans or Kidney Beans
  • 2 tbsp Taco Seasoning
  • 1/2 cup Zesty Ranch or Taco Dressing
  • 1 cup Cheddar Cheese, shredded

Instructions

  1. Cook your chicken by grilling or pan-searing it, seasoned with taco seasoning. Let it rest before slicing.
  2. Boil pasta in salted water until al dente, then drain and rinse with cold water.
  3. Chop bell peppers, onions, and tomatoes while the chicken and pasta cool.
  4. In a large bowl, combine chicken, pasta, veggies, beans, and cheese. Drizzle dressing and toss thoroughly.
  5. Cover and refrigerate for 30 minutes before serving.

Notes

Top with crushed tortilla chips, avocado, cilantro, or lime wedges for added flavor.
