- 1 lb Chicken Breast, grilled or sautéed
- 8 oz Pasta (elbow macaroni or rotini)
- 1 cup Bell Peppers, chopped
- 1 cup Cherry Tomatoes, halved
- 1/2 cup Red Onions, chopped
- 1 cup Corn
- 1 can Black Beans or Kidney Beans
- 2 tbsp Taco Seasoning
- 1/2 cup Zesty Ranch or Taco Dressing
- 1 cup Cheddar Cheese, shredded
Instructions
- Cook your chicken by grilling or pan-searing it, seasoned with taco seasoning. Let it rest before slicing.
- Boil pasta in salted water until al dente, then drain and rinse with cold water.
- Chop bell peppers, onions, and tomatoes while the chicken and pasta cool.
- In a large bowl, combine chicken, pasta, veggies, beans, and cheese. Drizzle dressing and toss thoroughly.
- Cover and refrigerate for 30 minutes before serving.
Notes
Top with crushed tortilla chips, avocado, cilantro, or lime wedges for added flavor.
