- 1 ½ cups almond flour
- 1 egg
- 1 tablespoon olive oil
- ½ teaspoon sea salt
- 1 teaspoon garlic powder
- 2 cups fresh basil leaves
- ¼ cup olive oil
- ¼ cup pine nuts or walnuts
- 2 cloves garlic
- Salt and pepper to taste
- 1 cup cooked, shredded chicken
- 1 cup cherry tomatoes, halved
- ½ cup spinach leaves
- Optional: Vegan cheese or nutritional yeast
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine almond flour, egg, olive oil, sea salt, and garlic powder. Mix until it forms a doughy consistency.
- Spread the crust mixture onto a baking sheet lined with parchment paper and press it to form a circle (or rectangle) about ¼-inch thick.
- Bake the crust for 12-15 minutes until golden brown.
- In a food processor, combine basil leaves, olive oil, nuts, garlic, salt, and pepper. Blend until smooth.
- Once the crust is baked, let it cool briefly, then spread the pesto sauce over the crust.
- Sprinkle the cooked, shredded chicken on top, followed by cherry tomatoes and spinach leaves.
- Return the pizza to the oven and bake for another 10-12 minutes.
- Let it cool for a minute, then slice and serve.
