Ingredients

  • 1 ½ cups almond flour
  • 1 egg
  • 1 tablespoon olive oil
  • ½ teaspoon sea salt
  • 1 teaspoon garlic powder
  • 2 cups fresh basil leaves
  • ¼ cup olive oil
  • ¼ cup pine nuts or walnuts
  • 2 cloves garlic
  • Salt and pepper to taste
  • 1 cup cooked, shredded chicken
  • 1 cup cherry tomatoes, halved
  • ½ cup spinach leaves
  • Optional: Vegan cheese or nutritional yeast

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine almond flour, egg, olive oil, sea salt, and garlic powder. Mix until it forms a doughy consistency.
  3. Spread the crust mixture onto a baking sheet lined with parchment paper and press it to form a circle (or rectangle) about ¼-inch thick.
  4. Bake the crust for 12-15 minutes until golden brown.
  5. In a food processor, combine basil leaves, olive oil, nuts, garlic, salt, and pepper. Blend until smooth.
  6. Once the crust is baked, let it cool briefly, then spread the pesto sauce over the crust.
  7. Sprinkle the cooked, shredded chicken on top, followed by cherry tomatoes and spinach leaves.
  8. Return the pizza to the oven and bake for another 10-12 minutes.
  9. Let it cool for a minute, then slice and serve.
