Ingredients
- Rotini or penne pasta
- Grilled chicken (shredded or cubed)
- Romaine lettuce (chopped)
- Caesar dressing (store-bought or homemade)
- Shredded or grated Parmesan cheese
- Croutons
- Cherry tomatoes (optional)
Instructions
- Boil a pot of salted water. Add pasta and cook until al dente according to package instructions. Drain and rinse under cold water.
- Season chicken with salt, pepper, and olive oil. Grill until cooked through, about 6-7 minutes on each side.
- In a large bowl, combine pasta, grilled chicken, chopped romaine, and cherry tomatoes (if using). Drizzle in Caesar dressing and toss well.
- Add croutons and Parmesan cheese, and give it a gentle toss. Taste and adjust seasoning as desired.
Notes
Customize with extras like avocado or olives. Make ahead for meal prep but add croutons just before serving to maintain crunch.
